I am looking at a RedHat Linux box, hopefully yours will be the same.

If you look at /etc/localtime you will see it is symlinked to
../usr/share/zoneinfo/PST8PDT or possibly ../usr/share/zoneinfo/US/Pacific.

The easiest way is just to remove /etc/localtime and symlink it to
../usr/share/zoneinfo/UTC. After you do this, you will need to reset the clock on your
machine of course (use date). If you need to know the exact commands, let me know.
