Listen just dumps the protocol headers and the payload if there is any.
The output should be obvious if you know about the protocols you see.
So your question should probably be: Is there any documentation that
describes the TCP/IP protocol suite? And the answer of course is that
there is plenty of such documentation. There are good books and various
network resources. The RFCs and STDs could be a starting point. They can
be found for example from http://www.isi.edu/publications.html. Start with
STDs 5, 6 and 7.
