Having a quick look at the listen traces I think your problem is that you
have your Linux machines configured to use Virtual Circuit IP and that
ETHRAX25 seems to only support Datagram mode IP. In VC mode an AX.25
connection (virtual circuit) is first established between the stations and
IP traffic is carried over that. In datagram mode the IP traffic is
carried over AX.25 unproto (UI) frames.
Try disabling VC mode in your linux machine. Depending on kernel version
you should either "echo 0 > /proc/sys/net/ax25/.../ip_default_mode" or use
axparms. I don't think there is a way to make ETHRAX25 support VC mode (is
there?).
